Yogurt Cloud Cake


A light, airy, and refreshing cake that’s perfect for any occasion. This Yoghurt Cloud Cake combines the tanginess of yogurt with the fluffiness of a sponge cake, making it a delightful treat.

Ingredients

  • 1 cup plain Greek yogurt
  • 1/2 cup granulated sugar
  • 3 large eggs, separated
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • Powdered sugar, for dusting
  • Fresh berries, for garnish (optional)
  • Mint leaves, for garnish (optional)

Instructions

  1. Preheat the Oven:
  • Preheat your oven to 325°F (160°C). Grease and line an 8-inch round cake pan with parchment paper.
  1. Prepare the Batter:
  • In a large mixing bowl, whisk together the Greek yogurt, granulated sugar, egg yolks, vegetable oil, and vanilla extract until smooth and well combined.
  1. Sift the Dry Ingredients:
  • In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the yogurt mixture, stirring until just combined.
  1. Whip the Egg Whites:
  • In a clean mixing bowl, beat the egg whites and cream of tartar using an electric mixer on medium speed until soft peaks form. Gradually add a tablespoon of granulated sugar (from the 1/2 cup measured earlier) and continue beating until stiff peaks form.
  1. Fold in the Egg Whites:
  • Gently fold the whipped egg whites into the yogurt batter in three additions, being careful not to deflate the mixture.
  1. Bake the Cake:
  • Pour the batter into the prepared cake pan and smooth the top with a spatula. Tap the pan gently on the counter to release any air bubbles. Bake for 40-45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  1. Cool the Cake:
  • Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
  1. Serve:
  • Dust the cooled cake with powdered sugar and garnish with fresh berries and mint leaves if desired. Slice and enjoy!
