Thai Chicken Satay Recipe

Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into strips
  • 1/4 cup (60ml) coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Bamboo skewers, soaked in water for 30 minutes
  • Lime wedges, for serving
  • Chopped cilantro, for garnish

For the Peanut Dipping Sauce:

  • 1/2 cup (125g) creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/4 cup (60ml) coconut milk
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, minced garlic, turmeric, coriander, cumin, ginger, and cayenne pepper. Mix well to make the marinade.
  2. Add the chicken strips to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat grill or grill pan over medium-high heat.
  4. Thread marinated chicken strips onto soaked bamboo skewers.
  5. Grill the chicken skewers for 3-4 minutes per side, or until cooked through and slightly charred.
  6. While the chicken is grilling, prepare the peanut dipping sauce. In a small saucepan, combine peanut butter, soy sauce, lime juice, brown sugar, sesame oil, coconut milk, minced garlic, and red pepper flakes (if using). Cook over low heat, stirring continuously until smooth and heated through.
