Sweet & Sour Meatballs

Ingredients

  • 1 pound ground beef or pork
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground meat, breadcrumbs, egg, milk, salt, and pepper until well combined. Shape into meatballs and place on a baking sheet.
  3. Bake meatballs in the preheated oven for 15-20 minutes, or until cooked through.
  4. In a large skillet or wok, heat vegetable oil over medium heat. Add bell pepper and onion, sauté until tender.
  5. Add pineapple chunks (with juice), ketchup, soy sauce, vinegar, and brown sugar to the skillet. Bring to a simmer.
  6. In a small bowl, mix cornstarch and water until smooth. Stir into the skillet mixture and cook until the sauce thickens.
  7. Add cooked meatballs to the skillet, gently toss to coat with the sauce.
