Ingredients
- 1 pound ground beef or pork
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 cup pineapple chunks
- 1/2 cup ketchup
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground meat, breadcrumbs, egg, milk, salt, and pepper until well combined. Shape into meatballs and place on a baking sheet.
- Bake meatballs in the preheated oven for 15-20 minutes, or until cooked through.
- In a large skillet or wok, heat vegetable oil over medium heat. Add bell pepper and onion, sauté until tender.
- Add pineapple chunks (with juice), ketchup, soy sauce, vinegar, and brown sugar to the skillet. Bring to a simmer.
- In a small bowl, mix cornstarch and water until smooth. Stir into the skillet mixture and cook until the sauce thickens.
- Add cooked meatballs to the skillet, gently toss to coat with the sauce.
