Ingredients

  • 2 ripe tomatoes, diced
  • 1 ripe mango, peeled and diced
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or thawed if frozen)
  • 1/2 red onion, finely chopped
  • 1 jalapeño or serrano pepper, seeded and finely chopped (optional, for heat)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the diced tomatoes, mango, black beans, corn, red onion, and chopped pepper (if using).
  2. Add the chopped cilantro and lime juice to the bowl.
  3. Gently toss all the ingredients together until well combined.
  4. Season with salt and pepper to taste.
  5. Chill the salsa in the refrigerator for at least 30 minutes to allow the flavors to meld together.
