Ingredients
- 2 ripe tomatoes, diced
- 1 ripe mango, peeled and diced
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh, canned, or thawed if frozen)
- 1/2 red onion, finely chopped
- 1 jalapeño or serrano pepper, seeded and finely chopped (optional, for heat)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced tomatoes, mango, black beans, corn, red onion, and chopped pepper (if using).
- Add the chopped cilantro and lime juice to the bowl.
- Gently toss all the ingredients together until well combined.
- Season with salt and pepper to taste.
- Chill the salsa in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Serve chilled or at room temperature with tortilla chips, over grilled chicken or fish, or as a topping for tacos or salads.
