Stuffed Mekitsi with Eggs and Feta
Mekitsi are traditional Bulgarian fried dough pieces, often enjoyed for breakfast or as a snack. This version is stuffed with a delicious mixture of eggs and feta cheese, adding a savory twist to this beloved treat.
Ingredients
- For the dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon baking soda
- 1 cup plain yogurt
- 1 egg
- 2 tablespoons vegetable oil
- For the filling:
- 4 eggs
- 1 cup crumbled feta cheese
- 2 tablespoons chopped fresh dill (optional)
- Salt and pepper to taste
- For frying:
- Vegetable oil
Instructions
- Prepare the dough:
- In a large mixing bowl, combine the flour, salt, sugar, and baking soda.
- In a separate bowl, whisk together the yogurt, egg, and vegetable oil.
- Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for a few minutes until smooth.
- Cover the dough with a clean cloth and let it rest for about 30 minutes.
- Prepare the filling:
- In a medium bowl, whisk the eggs until well beaten.
- Add the crumbled feta cheese and chopped dill (if using). Mix well.
- Season with salt and pepper to taste.
- Assemble the Mekitsi:
- Divide the dough into small, equal-sized balls.
- On a lightly floured surface, roll each ball into a small circle (about 4-5 inches in diameter).
- Place a spoonful of the egg and feta mixture in the center of each dough circle.
- Fold the dough over the filling, pinching the edges together to seal. You can use a fork to crimp the edges for a better seal.
- Fry the Mekitsi:
- In a deep skillet or frying pan, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).
- Carefully place the stuffed Mekitsi in the hot oil, a few at a time, making sure not to overcrowd the pan.
- Fry until golden brown and crispy on both sides, about 2-3 minutes per side.
- Remove with a slotted spoon and drain on paper towels.
- Serve:
- Serve the stuffed Mekitsi warm, either on their own or with a side of yogurt for dipping.
