Ingredients

  • 1 lb (450g) fresh spinach, washed and stems removed
  • 2 tablespoons olive oil

  • Salt and black pepper to taste
  • 1 cup grated Gruyere cheese
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons breadcrumbs (optional)

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Prepare the spinach:
  • Bring a large pot of salted water to a boil.
  • Add the spinach and cook for about 1-2 minutes until wilted.
  • Drain the spinach and immediately plunge it into a bowl of ice water to stop the cooking process.
  • Drain again and squeeze out any excess water. Chop the spinach coarsely and set aside.
  1. Cook the onions and garlic:
  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  1. Combine the ingredients:
  • Stir in the heavy cream and bring to a simmer.
  • Add the chopped spinach, nutmeg, salt, and black pepper. Mix well and cook for another 2-3 minutes until everything is heated through.
  1. Add the cheese:
  • Remove the skillet from the heat and stir in the grated Gruyere cheese until melted and well combined.
  1. Transfer to baking dish:
  • Transfer the mixture to a greased baking dish.
  • If desired, sprinkle the top with grated Parmesan cheese and breadcrumbs for a crunchy topping.
  1. Bake:
  • Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
  1. Serve:
  • Remove from the oven and let it cool for a few minutes before serving. Enjoy your Spinach and Gruyere dish as a savory side or a light main course!
