  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 2 tablespoons gelatin powder
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the crust: In a bowl, mix the crushed graham crackers with melted butter until well combined. Press the mixture onto the bottom of a springform pan to form an even crust. Chill in the refrigerator while preparing the filling.
  2. Prepare the filling: In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.
  3. In a saucepan, melt the unsalted butter over low heat. Add the cream cheese and granulated sugar, stirring continuously until smooth and well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture gently.
  5. Heat the bloomed gelatin mixture in the microwave for about 20-30 seconds until completely dissolved. Let it cool slightly.
  6. Gradually add the gelatin mixture to the cream cheese mixture, stirring continuously until fully incorporated. Add vanilla extract and lemon juice, mix well.
  7. Pour the filling over the prepared crust in the springform pan. Smooth the top with a spatula.
  8. Refrigerate the cake for at least 4 hours or until set.
  9. Once the cake is set, carefully remove it from the springform pan. Dust the top with powdered sugar if desired.
  10. Slice and serve chilled. Enjoy the creamy goodness of Snow Cheese Cake with friends and family!

Note: You can garnish the cake with fresh berries or a drizzle of chocolate sauce for added flavor and presentation.
