Smash Burger Grilled Cheese
Ingredients
- For the Smash Burgers:
- 1 lb ground beef (preferably 80% lean, 20% fat)
- Salt and pepper to taste
- 1 small onion, finely diced (optional)
- 2 tablespoons butter
- For the Grilled Cheese:
- 8 slices of your favorite bread (e.g., sourdough, white, or rye)
- 4 tablespoons butter, softened (for spreading on the bread)
- 8 slices of cheese (e.g., cheddar, American, or your favorite melting cheese)
- Additional toppings (optional): pickles, ketchup, mustard, lettuce, tomato
Instructions
- Prepare the Smash Burgers:
- Divide the ground beef into 4 equal portions and loosely shape them into balls.
- Heat a large skillet or griddle over medium-high heat until very hot. Add 1 tablespoon of butter and let it melt.
- Place 2 beef balls in the skillet. Using a sturdy spatula, smash the beef balls down flat until they’re about 1/4 inch thick. Season with salt and pepper.
- Cook for about 2 minutes until the edges are crispy and brown. Flip the burgers, season again with salt and pepper, and cook for another 1-2 minutes until the desired doneness.
- Remove the burgers from the skillet and repeat with the remaining beef balls.
- Assemble the Grilled Cheese:
- Butter one side of each slice of bread.
- Heat a clean skillet or griddle over medium heat.
- Place 4 slices of bread, buttered side down, in the skillet. Top each with a slice of cheese.
- Place one smash burger on top of the cheese on each slice of bread.
- Add any additional toppings you desire (e.g., pickles, ketchup, mustard, lettuce, tomato).
- Top each burger with another slice of cheese and then place the remaining slices of bread on top, buttered side up.
- Cook the Grilled Cheese:
- Cook until the bottom slice of bread is golden brown and crispy, about 3-4 minutes.
- Carefully flip each sandwich and cook until the second side is golden brown and the cheese is melted, another 3-4 minutes.
- Press down gently with a spatula to ensure everything sticks together and the cheese melts properly.
- Serve:
- Remove the sandwiches from the skillet and let them rest for a minute before slicing.
- Serve hot with your favorite sides like fries or a salad.
