Ingredients

  • For the Smash Burgers:
  • 1 lb ground beef (preferably 80% lean, 20% fat)
  • Salt and pepper to taste
  • 1 small onion, finely diced (optional)
  • 2 tablespoons butter
  • For the Grilled Cheese:
  • 8 slices of your favorite bread (e.g., sourdough, white, or rye)
  • 4 tablespoons butter, softened (for spreading on the bread)
  • 8 slices of cheese (e.g., cheddar, American, or your favorite melting cheese)
  • Additional toppings (optional): pickles, ketchup, mustard, lettuce, tomato

Instructions

  1. Prepare the Smash Burgers:
  2. Divide the ground beef into 4 equal portions and loosely shape them into balls.
  3. Heat a large skillet or griddle over medium-high heat until very hot. Add 1 tablespoon of butter and let it melt.
  4. Place 2 beef balls in the skillet. Using a sturdy spatula, smash the beef balls down flat until they’re about 1/4 inch thick. Season with salt and pepper.
  5. Cook for about 2 minutes until the edges are crispy and brown. Flip the burgers, season again with salt and pepper, and cook for another 1-2 minutes until the desired doneness.
  6. Remove the burgers from the skillet and repeat with the remaining beef balls.
  7. Assemble the Grilled Cheese:
  8. Butter one side of each slice of bread.
  9. Heat a clean skillet or griddle over medium heat.
  10. Place 4 slices of bread, buttered side down, in the skillet. Top each with a slice of cheese.
  11. Place one smash burger on top of the cheese on each slice of bread.
  12. Add any additional toppings you desire (e.g., pickles, ketchup, mustard, lettuce, tomato).
  13. Top each burger with another slice of cheese and then place the remaining slices of bread on top, buttered side up.
  14. Cook the Grilled Cheese:
  15. Cook until the bottom slice of bread is golden brown and crispy, about 3-4 minutes.
  16. Carefully flip each sandwich and cook until the second side is golden brown and the cheese is melted, another 3-4 minutes.
