- 1/2 pound (225g) shrimp, peeled and deveined
- 1 egg white
- 2 green onions, finely chopped

- Prepare the Shrimp Mixture:
- In a food processor, combine the shrimp, egg white, green onions, soy sauce, sesame oil, ginger, garlic, cornstarch, salt, and white pepper.
- Process until the mixture is smooth and well combined.
- Prepare the Bread:
- Cut the crusts off the slices of white bread.
- Cut each slice into quarters (triangles or rectangles as preferred).
- Spread the Shrimp Mixture:
- Spread a generous layer of the shrimp mixture onto each piece of bread.
- Press down lightly to ensure the mixture adheres well to the bread.
- If desired, sprinkle sesame seeds over the shrimp mixture.
- Heat the Oil:
- In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot (about 350°F or 175°C).
- Fry the Shrimp Toast:
- Carefully place the shrimp-topped bread pieces, shrimp side down, into the hot oil.
- Fry for about 2-3 minutes until golden brown and crispy.
- Flip and fry the other side for an additional 1-2 minutes until the bread is golden.
- Drain and Serve:
- Remove the shrimp toast from the oil and place on a paper towel-lined plate to drain any excess oil.
- Serve immediately with your favorite dipping sauce (such as sweet chili sauce or soy sauce).
