  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese

  • 2 eggs, lightly beaten
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Place the grated zucchini in a colander over the sink and sprinkle with salt. Let it sit for about 10 minutes to release excess moisture. Then, squeeze the zucchini to remove as much liquid as possible.
