Ingredients
- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- 2 eggs, lightly beaten
- 2 tablespoons olive oil (for frying)

Instructions
- Place the grated zucchini in a colander over the sink and sprinkle with salt. Let it sit for about 10 minutes to release excess moisture. Then, squeeze the zucchini to remove as much liquid as possible.
- In a large bowl, combine the grated zucchini, flour, Parmesan cheese, minced garlic, black pepper, and beaten eggs. Mix until well combined.
- Heat the olive oil in a large skillet over medium heat.
