Potato and Bacon Soup Recipe

Ingredients

  • 6 slices bacon, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 large potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh chives or green onions for garnish (optional)

Directions

  1. In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set it aside on a paper towel-lined plate to drain, leaving the bacon fat in the pot.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to low and simmer until the potatoes are fork-tender, about 15-20 minutes.
  4. Once the potatoes are cooked, use an immersion blender to puree the soup until smooth and creamy. Alternatively, you can transfer the soup in batches to a blender and blend until smooth, then return it to the pot.
  5. Stir in the heavy cream and cooked bacon, reserving some bacon for garnish if desired. Season the soup with salt and pepper to taste.
