- 6 slices bacon, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 large potatoes, peeled and diced

Directions
- In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set it aside on a paper towel-lined plate to drain, leaving the bacon fat in the pot.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
- Add the diced potatoes to the pot and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to low and simmer until the potatoes are fork-tender, about 15-20 minutes.
