Ingredients

For the Pork Chops:

  • 4 bone-in pork chops (about 1-inch thick)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

For the Scalloped Potatoes:

  • 4 large potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup grated cheddar cheese
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon paprika

Instructions

  1. Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  1. Prepare Pork Chops:
  • Season the pork chops with salt, pepper, garlic powder, onion powder, paprika, thyme, and rosemary.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Sear the pork chops for about 3-4 minutes on each side, until golden brown. Remove from the skillet and set aside.
  1. Prepare Scalloped Potatoes:
  • In the same skillet, melt the butter over medium heat.
  • Add the flour and cook, stirring constantly, for about 1 minute to form a roux.
  • Gradually whisk in the milk, stirring continuously until the sauce thickens, about 3-5 minutes.
  • Stir in the cheddar cheese, garlic powder, onion powder, thyme, paprika, salt, and pepper until the cheese is melted and the sauce is smooth.
  • In a greased 9×13 inch baking dish, layer half of the sliced potatoes and onions.
  • Pour half of the cheese sauce over the potatoes.
  • Add another layer of potatoes and onions, and pour the remaining cheese sauce over the top.
  1. Bake:
  • Place the seared pork chops on top of the potatoes.
  • Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the pork chops are cooked through (internal temperature should reach 145°F or 63°C).
  1. Serve:
  • Let the dish rest for 5 minutes before serving.
  • Serve the pork chops with a generous helping of scalloped potatoes.
