Ingredients
- For the Filling:
- 6-8 ripe peaches, pitted and sliced
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon (optional)
- For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cubed
- 1/2 cup granulated sugar
- 1/4 cup milk (or buttermilk)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Prepare the Filling: In a large bowl, combine the sliced peaches, sugar, cornstarch, lemon juice, and cinnamon (if using). Toss to coat the peaches evenly.
- Make the Cobbler Topping: In a medium bowl, whisk together the flour, baking powder, and salt. Using a pastry cutter or your fingers, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the sugar until just combined.
