Parmesan Meatloaf Recipe

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, lightly beaten
  • 1/4 cup ketchup
  • 1/4 cup grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter and set aside.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, 1/4 cup grated Parmesan cheese, chopped parsley, onion, garlic, oregano, basil, salt, pepper, and beaten eggs. Mix until well combined.
  3. Transfer the mixture into the prepared loaf pan and press it down evenly.
  4. Spread the ketchup over the top of the meatloaf and sprinkle with the remaining 1/4 cup of grated Parmesan cheese.
