Mongolian Chicken Recipe

Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 1/4 cup brown sugar
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 2 green onions, thinly sliced (for garnish)
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss the chicken pieces with cornstarch until evenly coated.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add a bit more oil if needed and sauté the minced garlic and ginger until fragrant, about 1-2 minutes.
  4. In a small bowl, whisk together the soy sauce, water, brown sugar, hoisin sauce, and sesame oil until well combined. Pour the sauce mixture into the skillet with the garlic and ginger.
  5. Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.
  6. Add the cooked chicken back into the skillet and toss to coat it evenly with the sauce. Cook for another 2-3 minutes, allowing the chicken to absorb the flavors of the sauce.
  7. Remove the skillet from the heat and garnish with sliced green onions.
