Ingredients
- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 1/4 cup brown sugar
- 2 tablespoons hoisin sauce
- 1 teaspoon sesame oil
- 2 green onions, thinly sliced (for garnish)
- Cooked rice, for serving
Instructions
- In a bowl, toss the chicken pieces with cornstarch until evenly coated.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add a bit more oil if needed and sauté the minced garlic and ginger until fragrant, about 1-2 minutes.
- In a small bowl, whisk together the soy sauce, water, brown sugar, hoisin sauce, and sesame oil until well combined. Pour the sauce mixture into the skillet with the garlic and ginger.
- Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened.
- Add the cooked chicken back into the skillet and toss to coat it evenly with the sauce. Cook for another 2-3 minutes, allowing the chicken to absorb the flavors of the sauce.
- Remove the skillet from the heat and garnish with sliced green onions.
- Serve the Mongolian Chicken hot over cooked rice. Enjoy your delicious homemade Mongolian feast!
