Mini Pineapple Upside Down Cakes Recipe

Ingredients

  • 1 can (20 oz) pineapple slices in juice
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • Maraschino cherries, halved
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with butter or non-stick cooking spray.
  2. Drain the pineapple slices, reserving the juice. Blot the pineapple slices with paper towels to remove excess moisture.
  3. In a small bowl, mix together the melted butter and brown sugar until well combined. Spoon the mixture evenly into the bottoms of the prepared muffin tin cups.
  4. Place a pineapple slice in each muffin cup on top of the brown sugar mixture. Press a maraschino cherry half into the center of each pineapple slice.
  5. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  6. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, until fully incorporated. Stir in the vanilla extract.
  7. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  8. Spoon the batter evenly over the pineapple slices in the muffin tin cups, filling each cup about 2/3 full.
  9. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  10. Allow the mini cakes to cool in the muffin tin for about 5 minutes, then carefully invert the tin onto a wire rack or baking sheet to release the cakes. Let them cool completely before serving.
