Ingredients
- 1 can (20 oz) pineapple slices in juice
- 1/4 cup unsalted butter, melted
- 1/2 cup brown sugar, packed
- Maraschino cherries, halved
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin with butter or non-stick cooking spray.
- Drain the pineapple slices, reserving the juice. Blot the pineapple slices with paper towels to remove excess moisture.
- In a small bowl, mix together the melted butter and brown sugar until well combined. Spoon the mixture evenly into the bottoms of the prepared muffin tin cups.
- Place a pineapple slice in each muffin cup on top of the brown sugar mixture. Press a maraschino cherry half into the center of each pineapple slice.
- In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, until fully incorporated. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
- Spoon the batter evenly over the pineapple slices in the muffin tin cups, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a cake comes out clean.
- Allow the mini cakes to cool in the muffin tin for about 5 minutes, then carefully invert the tin onto a wire rack or baking sheet to release the cakes. Let them cool completely before serving.
