Ingredients
- 1 sheet of refrigerated pie crust, thawed
- 1/2 cup diced ham
- 1/2 cup shredded cheese (cheddar, Swiss, or your favorite melting cheese)
- 4 large eggs
- 1/4 cup milk or heavy cream
- Salt and pepper to taste
- Optional: chopped fresh herbs like chives or parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or butter.
- Roll out the pie crust on a lightly floured surface. Use a round cookie cutter or the rim of a glass to cut out circles slightly larger than the muffin tin openings. Press each circle gently into the muffin tin, making sure the dough comes up the sides.
- Place a small amount of diced ham and shredded cheese into each muffin cup.
- In a mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.
- Carefully pour the egg mixture into each muffin cup, filling them almost to the top.
- Bake in the preheated oven for 12-15 minutes, or until the quiches are set and the crust is golden brown.
- Remove the quiches from the oven and let them cool in the muffin tin for a few minutes. Use a butter knife to gently loosen the edges of the quiches, then transfer them to a wire rack to cool completely.
