Mexican Shredded Chicken Stuffed Peppers

Ingredients
- 4 large bell peppers (any color)
- 2 cups shredded cooked chicken
- 1 cup black beans (cooked or canned, drained and rinsed)
- 1 cup corn kernels (fresh, frozen, or canned, drained)
- 1 cup salsa (your favorite kind)
- 1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
- Lime wedges (optional, for serving)
- Avocado slices or sour cream (optional, for serving)
Instructions
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Peppers:
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Place the peppers in a baking dish, cut side up. If they don’t stand up straight, you can trim a small amount off the bottom to create a flat base.
- Make the Filling:
- In a large bowl, combine the shredded chicken, black beans, corn, salsa, ground cumin, chili powder, garlic powder, salt, and pepper. Mix until well combined.
- Stuff the Peppers:
- Spoon the chicken mixture into each bell pepper, filling them to the top. Press down gently to pack the filling in.
- Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and sprinkle the shredded cheese on top of each stuffed pepper.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
