Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 tablespoon butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon smooth apricot jam
  • 1 tablespoon vinegar
  • 1/2 cup milk

For the Sauce:

  • 1 cup heavy cream
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1/2 cup hot water
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, sift together the flour, baking soda, and salt.
  3. In a separate bowl, cream together the melted butter and sugar until light and fluffy.
  4. Beat in the egg and apricot jam until well combined.
  5. Mix the vinegar with the milk and let it sit for a few minutes until it curdles slightly. Then add it to the butter-sugar mixture.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the greased baking dish and smooth the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. While the pudding is baking, prepare the sauce. In a saucepan, combine the heavy cream, butter, sugar, hot water, and vanilla extract. Heat over medium heat, stirring constantly, until the sugar is completely dissolved and the sauce is smooth. Be careful not to let it boil.
  10. Once the pudding is baked, remove it from the oven and poke holes all over the top using a skewer or fork.
  11. Slowly pour the hot sauce over the warm pudding, allowing it to soak in. You may not need to use all of the sauce, depending on how moist you like your pudding.
  12. Let the pudding stand for a few minutes before serving, allowing the flavors to meld together.
