Lemon Cake Recipe

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the lemon zest.
  5. In a small bowl, combine the lemon juice, milk, and vanilla extract.
  6. Gradually add the flour mixture to the butter mixture, alternating with the lemon juice mixture. Begin and end with the flour mixture, mixing just until combined.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
