Ingredients

  • 3 lbs (1.4 kg) beef chuck roast
  • Salt and pepper, to taste
  • 3 tablespoons olive oil

  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup (240 ml) dry red wine
  • 1 cup (240 ml) beef broth
  • 1 can (28 oz or 800 g) crushed tomatoes

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Beef:
  • Season the beef chuck roast generously with salt and pepper on all sides.
  1. Sear the Beef:
  • Heat the olive oil in a large, heavy pot or Dutch oven over medium-high heat.
  • Sear the beef roast on all sides until it is browned. Remove the beef from the pot and set it aside.
  1. Cook the Vegetables:
  • In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  1. Deglaze the Pot:
  • Pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to simmer for a few minutes to reduce slightly.

  • Cover the pot and reduce the heat to low. Let it cook slowly for about 3 to 4 hours, or until the beef is fork-tender and easily shredded.
