Ingredients
- 3 lbs (1.4 kg) beef chuck roast
- Salt and pepper, to taste
- 3 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 cup (240 ml) dry red wine
- 1 cup (240 ml) beef broth
- 1 can (28 oz or 800 g) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 bay leaf
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Beef:
- Season the beef chuck roast generously with salt and pepper on all sides.
- Sear the Beef:
- Heat the olive oil in a large, heavy pot or Dutch oven over medium-high heat.
- Sear the beef roast on all sides until it is browned. Remove the beef from the pot and set it aside.
- Cook the Vegetables:
- In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Deglaze the Pot:
- Pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to simmer for a few minutes to reduce slightly.
- Combine Ingredients:
- Return the seared beef to the pot.
- Add the beef broth, crushed tomatoes, tomato paste, dried oregano, dried basil, and bay leaf. Stir to combine.
- Slow Cook:
- Bring the mixture to a simmer.
- Cover the pot and reduce the heat to low. Let it cook slowly for about 3 to 4 hours, or until the beef is fork-tender and easily shredded.
- Finish the Dish:
- Once the beef is tender, remove it from the pot and shred it with two forks.
- Return the shredded beef to the pot and mix it with the sauce. Simmer for an additional 10-15 minutes to let the flavors meld.
- Serve:
- Serve the Stracotto over polenta, mashed potatoes, or pasta.
- Garnish with freshly chopped parsley.
