Indulge in the sweet delight of homemade nougat with this simple and delicious recipe. This chewy, nutty confection is perfect for gifting or enjoying as a treat any time of the year.
Ingredients
- 1 cup granulated sugar
- ½ cup honey
- ⅓ cup water
- 2 large egg whites
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (such as almonds, pistachios, or hazelnuts)
- Optional: ½ cup dried fruit (such as chopped apricots or cranberries)
- Powdered sugar, for dusting
Directions
- Prepare a baking dish by lining it with parchment paper and lightly dusting it with powdered sugar. This will prevent the nougat from sticking.
- In a medium saucepan, combine the granulated sugar, honey, and water. Stir over medium heat until the sugar dissolves.
- Attach a candy thermometer to the side of the saucepan and continue to cook the mixture, without stirring, until it reaches 280°F (138°C), which is the hard-ball stage.
- While the sugar mixture is cooking, in a separate bowl, beat the egg whites until stiff peaks form.
- Once the sugar mixture reaches 280°F (138°C), remove it from the heat and gradually pour it into the beaten egg whites, whisking continuously.
- Continue to whisk the mixture until it becomes thick and glossy, about 5-7 minutes.
- Stir in the vanilla extract, chopped nuts, and dried fruit, if using, until well combined.
- Quickly pour the nougat mixture into the prepared baking dish and spread it out evenly with a spatula.
- Allow the nougat to cool and set at room temperature for at least 4 hours, or preferably overnight.
- Once the nougat is completely set, use a sharp knife to cut it into small squares or rectangles.
- Dust the cut edges of the nougat with powdered sugar to prevent them from sticking together.
- Store the nougat in an airtight container at room temperature for up to two weeks.
Enjoy your homemade nougat as a delightful treat or share it with friends and family for a special occasion!
