Homemade Nougat Recipe

Ingredients

  • 1 cup granulated sugar
  • ½ cup honey
  • ⅓ cup water
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (such as almonds, pistachios, or hazelnuts)
  • Optional: ½ cup dried fruit (such as chopped apricots or cranberries)
  • Powdered sugar, for dusting

Directions

  1. Prepare a baking dish by lining it with parchment paper and lightly dusting it with powdered sugar. This will prevent the nougat from sticking.
  2. In a medium saucepan, combine the granulated sugar, honey, and water. Stir over medium heat until the sugar dissolves.
  3. Attach a candy thermometer to the side of the saucepan and continue to cook the mixture, without stirring, until it reaches 280°F (138°C), which is the hard-ball stage.
  4. While the sugar mixture is cooking, in a separate bowl, beat the egg whites until stiff peaks form.
  5. Once the sugar mixture reaches 280°F (138°C), remove it from the heat and gradually pour it into the beaten egg whites, whisking continuously.
  6. Continue to whisk the mixture until it becomes thick and glossy, about 5-7 minutes.
  7. Stir in the vanilla extract, chopped nuts, and dried fruit, if using, until well combined.
  8. Quickly pour the nougat mixture into the prepared baking dish and spread it out evenly with a spatula.
  9. Allow the nougat to cool and set at room temperature for at least 4 hours, or preferably overnight.
  10. Once the nougat is completely set, use a sharp knife to cut it into small squares or rectangles.
  11. Dust the cut edges of the nougat with powdered sugar to prevent them from sticking together.
  12. Store the nougat in an airtight container at room temperature for up to two weeks.
