Heavenly Coconut Cake Recipe

Ingredients

  • 2 cups all-purpose flour

For the Coconut Frosting:

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup shredded coconut (sweetened)
  • 2-3 tablespoons coconut milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch cake pan or two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk, beginning and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the shredded coconut until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan(s) and spread it out evenly.
  8. Bake in the preheated oven for 25-30 minutes (for round pans) or 30-35 minutes (for a rectangular pan), or until a toothpick inserted into the center comes out clean.

  10. While the cake is cooling, prepare the coconut frosting. In a mixing bowl, cream together the softened butter and powdered sugar until smooth.
  11. Add the vanilla extract and 2 tablespoons of coconut milk, and beat until creamy. If needed, add an additional tablespoon of coconut milk to achieve your desired consistency.
  12. Once the cake is completely cooled, frost the top and sides with the coconut frosting. Sprinkle the shredded coconut on top for an extra burst of coconut flavor and decoration.
