- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/2 cup whole wheat flour (plus more for dusting)
- Tomato sauce, for serving (optional)
Instructions
- Prepare the Spinach:
- Blanch the chopped spinach in boiling water for 1-2 minutes until wilted. Drain well and squeeze out excess water. Chop finely.
- Make the Dumpling Mixture:
- In a large bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, egg, nutmeg, salt, and pepper. Mix well until everything is evenly combined.
- Form the Dumplings:
- Gradually add the whole wheat flour to the spinach mixture, stirring until a soft dough forms. The dough should be firm enough to hold its shape but still soft and pliable.
- Dust a clean surface with flour. Take spoonfuls of the dough and roll them into small balls, about 1 inch in diameter. Use your hands to shape them into dumplings.
- Cook the Dumplings:
- Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water, a few at a time, using a slotted spoon.
- Cook the dumplings for about 3-4 minutes, or until they float to the surface. Remove them with a slotted spoon and drain well.
- Serve:
- Serve the spinach ricotta dumplings hot, topped with tomato sauce if desired. Garnish with additional grated Parmesan cheese if desired.
