healthy spinach ricotta dumplings

Ingredients

  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup whole wheat flour (plus more for dusting)
  • Tomato sauce, for serving (optional)

Instructions

  1. Prepare the Spinach:
  • Blanch the chopped spinach in boiling water for 1-2 minutes until wilted. Drain well and squeeze out excess water. Chop finely.
  1. Make the Dumpling Mixture:
  • In a large bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, egg, nutmeg, salt, and pepper. Mix well until everything is evenly combined.
  1. Form the Dumplings:
  • Gradually add the whole wheat flour to the spinach mixture, stirring until a soft dough forms. The dough should be firm enough to hold its shape but still soft and pliable.
  • Dust a clean surface with flour. Take spoonfuls of the dough and roll them into small balls, about 1 inch in diameter. Use your hands to shape them into dumplings.
  1. Cook the Dumplings:
  • Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water, a few at a time, using a slotted spoon.
  • Cook the dumplings for about 3-4 minutes, or until they float to the surface. Remove them with a slotted spoon and drain well.
  1. Serve:
  • Serve the spinach ricotta dumplings hot, topped with tomato sauce if desired. Garnish with additional grated Parmesan cheese if desired.
