Ground Beef Mongolian Noodles RECIPE

This recipe is a quick and easy weeknight dinner that’s full of flavor!

Ingredients

  • 1 pound ground beef (lean or ground turkey can be substituted)
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup beef broth
  • 3 tablespoons hoisin sauce
  • 1/2 teaspoon black pepper
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 10 ounces noodles (lo mein, linguine, or spaghetti work well)
  • 4 green onions, sliced (optional)
  • Red pepper flakes (optional, for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions until al dente. Drain the noodles, reserving about 1 cup of the pasta water before discarding.
  2. Brown the beef: In a large skillet or wok, heat oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  3. Sauté the aromatics: Add the garlic and ginger to the pan with the cooked beef and cook for about 30 seconds, or until fragrant.
  4. Make the sauce: In a small bowl, whisk together the soy sauce, brown sugar, beef broth, hoisin sauce, and black pepper. Pour the sauce into the pan with the beef and stir to combine.
  5. Thicken the sauce: In a separate small bowl, whisk together the cornstarch and water to make a slurry. Add the slurry to the pan with the sauce and simmer for 1-2 minutes, or until the sauce thickens slightly.
  6. Combine: Add the cooked noodles and reserved pasta water to the pan with the sauce and toss to coat everything evenly.
  7. Serve: Garnish with sliced green onions, red pepper flakes (optional), and sesame seeds (optional) and enjoy!

Tips:

  • Feel free to adjust the amount of red pepper flakes to your desired level of spice.
  • You can add other vegetables to this dish, such as broccoli florets, shredded carrots, or sliced bell peppers. Cook them along with the ground beef or add them to the sauce to simmer for a few minutes.
  • For a thicker sauce, add another tablespoon of cornstarch slurry or simmer the sauce for a longer time.
