Ingredients

  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • For the Vegetables:
  • 2 medium yellow squash, sliced
  • 2 medium zucchini, sliced
  • 2 cups cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken Marinade:
  • In a small bowl, mix together the olive oil, minced garlic, dried oregano, dried basil, paprika, salt, and pepper.
  • Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for best results.
  1. Preheat the Grill:
  • Preheat your grill to medium-high heat.
  1. Grill the Chicken:
  • Remove the chicken from the marinade and let any excess marinade drip off.
  • Grill the chicken breasts for 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F or 75°C).
  • Once cooked, remove from the grill and let rest for a few minutes before slicing.
  1. Prepare the Vegetables:
  • In a large bowl, toss the sliced squash, zucchini, and halved cherry tomatoes with olive oil, dried thyme, salt, and pepper.
  • Grill the vegetables in a grill basket or directly on the grill grates. Cook for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.
  1. Serve:
  • Arrange the grilled chicken slices on a serving platter.
  • Surround with the grilled squash, zucchini, and tomatoes.
  • Optionally, garnish with fresh basil or parsley for added flavor and presentation.
