- ¼ cup finely chopped red onion
- ¼ cup chopped fresh cilantro
- Juice and zest of 1 lime
- ½ jalapeño, minced (optional, for a kick of spice)
- ¼ teaspoon sea salt, or to taste
Instructions
- In a medium bowl, combine the diced mangoes, red onion, cilantro, lime juice, lime zest, and jalapeño (if using).
- Gently toss to coat all ingredients.
- Season with salt to taste.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Tips:
- For a sweeter salsa, add a teaspoon of honey or agave nectar.
- If your mangoes are not very ripe, you can add a squeeze of extra lime juice to brighten the flavor.
- This salsa is best enjoyed fresh, but will keep in the refrigerator for up to 2 days.
