A moist and rich chocolate cake that’s perfect for any occasion.
Ingredients
- For the Cake:
- 1 3/4 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- For the Frosting:
- 1 cup unsalted butter, softened
- 3 1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1/4 cup heavy cream
Instructions
For the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
- In a large bowl, stir together the flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add the milk, vegetable oil, eggs, and vanilla to the flour mixture and mix until well combined.
- Carefully add the boiling water to the batter and mix on low speed until the water is just incorporated. The batter will be very thin.
- Pour the batter evenly into the prepared pans.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the cakes to cool in the pans for about 10 minutes, then remove from the pans and cool completely on a wire rack.
For the Frosting:
- In a large bowl, beat the butter on medium speed until creamy.
- Gradually add the powdered sugar, cocoa powder, and salt, beating on low speed until combined.
- Add the vanilla extract and heavy cream and beat on high speed for about 3 minutes, until the frosting is light and fluffy.
- If the frosting is too thick, add a little more heavy cream; if it’s too thin, add more powdered sugar.
To Assemble:
- Place one cake layer on a serving plate. Spread a layer of frosting over the top.
- Place the second cake layer on top and spread frosting over the top and sides of the cake.
- Decorate as desired and serve.
