Banana Cake

Ingredients

  • Cake:
  • 1 ½ cups ripe bananas, mashed (about 3-4 bananas)
  • 2 teaspoons lemon juice
  • 3 cups all-purpose flour

  • ¾ cup unsalted butter, softened
  • 2 cups granulated sugar

  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar

Instructions

  1. Prepare the Cake:
  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • In a small bowl, mix the mashed bananas with the lemon juice and set aside.
  • In a medium bowl, mix the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
