Banana Cake

Ingredients
- Cake:
- 1 ½ cups ripe bananas, mashed (about 3-4 bananas)
- 2 teaspoons lemon juice
- 3 cups all-purpose flour
- 1 ½ teaspoons baking soda
- ¼ teaspoon salt
- ¾ cup unsalted butter, softened
- 2 cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 ½ cups buttermilk
- Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a small bowl, mix the mashed bananas with the lemon juice and set aside.
- In a medium bowl, mix the flour, baking soda, and salt. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
- Beat in the flour mixture alternately with the buttermilk, starting and ending with the flour mixture.
- Fold in the banana mixture.
- Pour batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely on a wire rack.
- Prepare the Frosting:
- In a large bowl, cream the butter and cream cheese until smooth.
- Beat in the vanilla extract.
- Gradually add the powdered sugar, one cup at a time, beating on low speed until combined and smooth after each addition.
- Assemble the Cake:
- Spread the frosting evenly over the cooled cake.
- Optionally, decorate with banana slices or chopped nuts.
