Ingredients
- 2 medium cucumbers, thinly sliced
- 1/4 red onion, thinly sliced (optional)
- 2 tablespoons olive oil
- 1 tablespoon vinegar (white, apple cider, or rice vinegar)
- 1 tablespoon fresh lemon juice (optional)
- 1/2 teaspoon dried dill or 1 tablespoon chopped fresh dill
- Salt and black pepper to taste
Instructions
- In a large bowl, combine the sliced cucumbers and red onion (if using).
- In a separate small bowl, whisk together the olive oil, vinegar, lemon juice (if using), dill, salt, and pepper.
- Pour the dressing over the cucumbers and onion, and toss to coat evenly.
