Cucumber, Onion, and Tomato Salad


This refreshing salad is a delightful combination of crisp cucumbers, zesty onions, and juicy tomatoes, tossed in a tangy dressing. It’s perfect for picnics, barbecues, or as a light side dish for any meal.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1 red onion, thinly sliced
  • 3 ripe tomatoes, diced
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the sliced cucumbers, onions, and diced tomatoes.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, honey, minced garlic, salt, and pepper until well combined.
  3. Pour the dressing over the cucumber, onion, and tomato mixture, and toss gently to coat all the ingredients evenly.
  4. Cover the salad bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
