Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup chopped nuts (such as walnuts or pecans), optional
  • 1 large egg
  • 3/4 cup orange juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon grated orange zest

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir in the chopped cranberries and nuts, if using.
  3. In a separate bowl, beat the egg lightly. Then, add the orange juice, vegetable oil, and grated orange zest. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Pour the batter into the prepared loaf pan, spreading it evenly.
  6. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Once cooled, slice and serve the cranberry bread. Enjoy it plain or with a spread of butter or cream cheese.
  9. Store any leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.

Enjoy your homemade cranberry bread!
