Crab Stuffed Shrimp RECIPE

This recipe is a delicious and elegant appetizer or light main course.

Ingredients

  • 1 pound large shrimp (16-20 count per pound), peeled, deveined, and butterflied (butterflying means making a shallow cut along the back and flattening the shrimp)
  • 8 ounces lump crabmeat (or claw or jumbo lump crabmeat)
  • ½ cup mayonnaise
  • 1 large egg, beaten
  • 1 teaspoon Old Bay seasoning
  • ½ teaspoon lemon juice
  • 1 tablespoon finely chopped fresh parsley
  • ½ cup panko breadcrumbs
  • 1 tablespoon melted butter
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the shrimp: In a medium bowl, toss the shrimp with salt and pepper.
  2. Make the crab stuffing: In another bowl, combine the crabmeat, mayonnaise, egg, Old Bay seasoning, lemon juice, and parsley. Mix gently to combine, taking care not to break up the crab lumps.
  3. Assemble the stuffed shrimp: Place a spoonful of the crab stuffing mixture in the center of each butterflied shrimp. Gently fold the shrimp halves closed, enclosing the stuffing.
  4. Dredge and coat: Spread the panko breadcrumbs on a plate. Dredge each stuffed shrimp in the breadcrumbs, coating them completely.
  5. Cooking options:
    • Baking: Preheat oven to 400°F (200°C). Arrange the stuffed shrimp on a baking sheet sprayed with cooking spray. Drizzle with melted butter. Bake for 15-20 minutes, or until the shrimp are cooked through and golden brown.
    • Pan-frying: Heat a large skillet over medium heat with 1-2 tablespoons of olive oil. Add the stuffed shrimp and cook for 2-3 minutes per side, or until golden brown and cooked through.
  6. Serve: Serve immediately with your favorite dipping sauce, such as cocktail sauce, tartar sauce, or lemon wedges.

Tips:

  • If you don’t have panko breadcrumbs, you can use crushed crackers, bread crumbs, or almond flour.
  • For a richer flavor, you can add a tablespoon of grated Parmesan cheese to the crab stuffing mixture.
  • You can also use jumbo shrimp for this recipe, but adjust the cooking time accordingly.
  • Be careful not to overcook the shrimp, as they will become tough.
