This recipe is a delicious and elegant appetizer or light main course.
Ingredients
- 1 pound large shrimp (16-20 count per pound), peeled, deveined, and butterflied (butterflying means making a shallow cut along the back and flattening the shrimp)
- 8 ounces lump crabmeat (or claw or jumbo lump crabmeat)
- ½ cup mayonnaise
- 1 large egg, beaten
- 1 teaspoon Old Bay seasoning
- ½ teaspoon lemon juice
- 1 tablespoon finely chopped fresh parsley
- ½ cup panko breadcrumbs
- 1 tablespoon melted butter
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the shrimp: In a medium bowl, toss the shrimp with salt and pepper.
- Make the crab stuffing: In another bowl, combine the crabmeat, mayonnaise, egg, Old Bay seasoning, lemon juice, and parsley. Mix gently to combine, taking care not to break up the crab lumps.
- Assemble the stuffed shrimp: Place a spoonful of the crab stuffing mixture in the center of each butterflied shrimp. Gently fold the shrimp halves closed, enclosing the stuffing.
- Dredge and coat: Spread the panko breadcrumbs on a plate. Dredge each stuffed shrimp in the breadcrumbs, coating them completely.
- Cooking options:
- Baking: Preheat oven to 400°F (200°C). Arrange the stuffed shrimp on a baking sheet sprayed with cooking spray. Drizzle with melted butter. Bake for 15-20 minutes, or until the shrimp are cooked through and golden brown.
- Pan-frying: Heat a large skillet over medium heat with 1-2 tablespoons of olive oil. Add the stuffed shrimp and cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve: Serve immediately with your favorite dipping sauce, such as cocktail sauce, tartar sauce, or lemon wedges.
Tips:
- If you don’t have panko breadcrumbs, you can use crushed crackers, bread crumbs, or almond flour.
- For a richer flavor, you can add a tablespoon of grated Parmesan cheese to the crab stuffing mixture.
- You can also use jumbo shrimp for this recipe, but adjust the cooking time accordingly.
- Be careful not to overcook the shrimp, as they will become tough.
