“Comforting Chicken & Noodles Crock Pot” recipe


A delicious and easy slow-cooked chicken and noodle dish that’s perfect for a comforting dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 8 oz egg noodles
  • 1 cup frozen peas (optional)
  • 1/2 cup heavy cream or half-and-half (optional)

Instructions

  1. Place the chicken breasts in the bottom of the crock pot.
  2. Add chopped onion, minced garlic, chicken broth, water, thyme, rosemary, parsley, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender.
  4. Remove the chicken from the crock pot and shred using two forks.
  5. Return shredded chicken to the crock pot.
  6. Stir in the egg noodles and frozen peas (if using). Cover and cook on high for an additional 30 minutes to 1 hour, or until noodles are tender.
  7. If using, stir in heavy cream or half-and-half during the last 15 minutes of cooking.
  8. Adjust seasoning with salt and pepper if needed.
  9. Serve hot and enjoy this comforting meal!
