A delicious and easy slow-cooked chicken and noodle dish that’s perfect for a comforting dinner.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup water
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 8 oz egg noodles
- 1 cup frozen peas (optional)
- 1/2 cup heavy cream or half-and-half (optional)
Instructions
- Place the chicken breasts in the bottom of the crock pot.
- Add chopped onion, minced garlic, chicken broth, water, thyme, rosemary, parsley, salt, and pepper.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender.
- Remove the chicken from the crock pot and shred using two forks.
- Return shredded chicken to the crock pot.
- Stir in the egg noodles and frozen peas (if using). Cover and cook on high for an additional 30 minutes to 1 hour, or until noodles are tender.
- If using, stir in heavy cream or half-and-half during the last 15 minutes of cooking.
- Adjust seasoning with salt and pepper if needed.
