Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 cups peeled and diced apples (such as Granny Smith or Fuji)

For the topping:

  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, using a hand mixer or stand mixer.
  4. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the diced apples until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan, spreading it out evenly with a spatula.
  8. In a small bowl, combine the granulated sugar and ground cinnamon for the topping. Sprinkle this mixture evenly over the top of the cake batter.
  9. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, carefully transfer the cake to a wire rack to cool completely.
  11. Serve slices of the cinnamon apple cake on its own or with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat. Enjoy!
