Ingredients

  • 200g prawns, peeled and deveined
  • 200g noodles (rice noodles or your choice)
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium carrot, julienned
  • 1 small broccoli head, cut into florets
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon chilli paste (adjust to taste)
  • 1 teaspoon sugar
  • 1 lime, juiced
  • 2 spring onions, chopped
  • Fresh coriander, chopped (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. Prepare the Noodles:
  • Cook the noodles according to the package instructions. Drain and set aside.
  1. Marinate the Prawns:
  • In a bowl, mix the prawns with 1 tablespoon of soy sauce and set aside for 10 minutes.
  1. Prepare the Sauce:
  • In a small bowl, combine the remaining soy sauce, oyster sauce, chilli paste, sugar, and lime juice. Mix well and set aside.
  1. Stir Fry:
  • Heat the vegetable oil in a large wok or frying pan over medium-high heat.
  • Add the garlic and ginger, and stir-fry for about 30 seconds until fragrant.
  • Add the prawns and cook for 2-3 minutes until they start to turn pink.

  • Pour the sauce over the prawns and vegetables. Mix well to coat everything evenly.

  • Add the cooked noodles to the wok. Toss everything together for another 2-3 minutes until the noodles are heated through and well coated with the sauce.
