Chicken with Potato Recipe

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium-sized potatoes, peeled and diced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the paprika, dried thyme, dried rosemary, salt, and pepper.
  3. Place the diced potatoes in a large bowl. Drizzle with olive oil and sprinkle with half of the seasoning mixture. Toss until the potatoes are evenly coated.
  4. Transfer the seasoned potatoes to a baking dish, spreading them out in an even layer.
  5. In the same bowl used for the potatoes, add the chicken breasts. Drizzle with olive oil and sprinkle with the remaining seasoning mixture. Toss until the chicken is evenly coated.
  6. Arrange the seasoned chicken breasts on top of the potatoes in the baking dish.
  7. Scatter the chopped onion and minced garlic over the chicken and potatoes.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
