Chicken Salad with Grapes Recipe


A refreshing and flavorful chicken salad combining tender chicken, sweet grapes, and a creamy dressing, perfect for a light lunch or a picnic.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup red grapes, halved
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 cup chopped pecans or walnuts (optional)
  • Lettuce leaves, for serving (optional)
  • Bread, croissants, or crackers, for serving (optional)

Instructions

  1. In a large bowl, combine the diced chicken, halved grapes, chopped celery, and finely chopped red onion.
  2. In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, honey, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and toss to coat evenly.
  4. If using, fold in the chopped pecans or walnuts.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
