Chicken Lasagna Roll Recipe

Ingredients

  • 8 lasagna noodles
  • 2 cups cooked, shredded chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with non-stick spray and set aside.
  2. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside to cool slightly.
  3. In a mixing bowl, combine the shredded chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, basil, oregano, salt, and pepper. Mix until well combined.
  4. Lay out a cooked lasagna noodle on a flat surface. Spread a generous amount of the chicken and cheese mixture evenly over the noodle.
  5. Carefully roll up the noodle, starting from one end, to form a tight roll. Place the roll seam side down in the prepared baking dish.
  6. Repeat with the remaining lasagna noodles and filling.
  7. Once all the rolls are in the baking dish, pour the marinara sauce over the top, spreading it evenly to cover the rolls.
  8. Sprinkle extra mozzarella and Parmesan cheese on top if desired.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the rolls are heated through and the cheese is melted and bubbly.
  10. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown.
