Ingredients
- 4 boneless, skinless chicken breasts or thighs (or a combination of both)
- Salt and freshly ground black pepper
- 1/4 cup all-purpose flour

- 1 cup chicken broth
- 1 cup heavy cream

Instructions
- Prep the chicken: Pat the chicken dry with paper towels and season generously with salt and pepper. Dredge the chicken in flour, shaking off any excess.
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the pan and set aside on a plate.
- Make the sauce: In the same pan (don’t wash it, those browned bits add flavor!), add the minced garlic and cook for 30 seconds, or until fragrant. Be careful not to burn the garlic.

- Simmer and thicken: Bring the broth to a simmer and cook for 2-3 minutes, or until slightly reduced. Stir in the heavy cream and Parmesan cheese. Let the sauce simmer for another 3-5 minutes, or until thickened slightly.
- Finish the dish: Return the cooked chicken to the pan and spoon the creamy garlic sauce over it. Let the chicken simmer in the sauce for an additional 2-3 minutes to heat through and allow the flavors to meld.
- Serve: Garnish with chopped fresh parsley (optional) and serve with your favorite sides, like mashed potatoes, rice, or roasted vegetables.
Tips:
- For a richer sauce, you can use full-fat cream cheese instead of Parmesan cheese. Add it to the sauce along with the heavy cream and whisk until melted and smooth.
- If you don’t have chicken broth, you can use water with 1 teaspoon of bouillon paste or powder.
- You can add other vegetables to the sauce, such as sliced mushrooms, chopped spinach, or sun-dried tomatoes. Add them along with the garlic in step 3.
- This recipe is easily doubled to feed a crowd. Just use a larger pan and adjust the cooking time as needed.
