Broccoli Apple Pear Salad
This refreshing and healthy salad combines the crunchiness of broccoli with the sweetness of apples and pears. It’s perfect for a light lunch or as a side dish.
Ingredients
- 2 cups fresh broccoli florets
- 1 large apple, cored and chopped
- 1 large pear, cored and chopped
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts (optional)
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled (optional)
Dressing:
- 1/4 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Prepare the Ingredients:
- Wash and chop the broccoli into small florets.
- Core and chop the apple and pear into bite-sized pieces.
- Finely chop the red onion.
- Mix the Dressing:
- In a small bowl, whisk together the Greek yogurt, mayonnaise, apple cider vinegar, honey, salt, and pepper until well combined.
- Combine the Salad:
- In a large mixing bowl, combine the broccoli florets, chopped apple, chopped pear, dried cranberries, chopped walnuts, and red onion.
- Pour the dressing over the salad and toss until everything is evenly coated.
