Ingredients

  • For the Wings:
    • 12 whole chicken wings, separated at the joint (or 24 drumettes and flats)
    • 1 tablespoon vegetable oil
    • 1 teaspoon baking powder
    • 1/2 teaspoon paprika
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/4 teaspoon cayenne pepper (adjust for desired spice level)
    • Salt and freshly ground black pepper to taste
  • For the Sauce (choose one):
    • Honey Garlic:
      • 1/2 cup honey
      • 1/4 cup soy sauce
      • 2 tablespoons sriracha (or chili garlic sauce)
      • 1 tablespoon minced garlic
      • 1 tablespoon brown sugar
      • 1 tablespoon rice vinegar
      • 1 teaspoon cornstarch (mixed with 1 tablespoon water)
    • Buffalo:
      • 1/2 cup hot sauce (such as Frank’s RedHot)
      • 1/4 cup melted butter
      • 1 tablespoon Worcestershire sauce
      • 1 tablespoon honey
      • 1/2 teaspoon garlic powder
      • 1/4 teaspoon cayenne pepper (adjust for desired spice level)

Instructions

  1. Prep the Wings: Pat the chicken wings dry with paper towels. In a large bowl, toss the wings with vegetable oil, baking powder, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  2. Bake the Wings: Preheat oven to 425°F (220°C). Arrange the wings on a baking sheet lined with parchment paper in a single layer. Bake for 30-35 minutes, flipping halfway through, or until golden brown and crispy.
  3. Make the Sauce (choose your flavor):
    • Honey Garlic: Whisk together honey, soy sauce, sriracha, garlic, brown sugar, rice vinegar, and cornstarch slurry in a saucepan over medium heat. Bring to a simmer and cook for 2-3 minutes, until thickened.
    • Buffalo: Combine hot sauce, melted butter, Worcestershire sauce, honey, garlic powder, and cayenne pepper in a saucepan over medium heat. Bring to a simmer and cook for 2-3 minutes.
  4. Toss and Serve: In a large bowl, toss the hot wings with your chosen sauce until well coated. Serve immediately with your favorite dipping sauces like ranch or blue cheese dressing.

Tips:

  • For extra crispy wings, crank the oven temperature up to 450°F (230°C) for the last 5 minutes of baking.
  • You can also grill the wings for a smoky flavor. Preheat your grill to medium-high heat and grill the wings for 5-7 minutes per side, or until cooked through.
  • Feel free to experiment with different sauce combinations to create your own unique flavors.
