Birria Wings with Consomé



These Birria Wings are packed with flavor, featuring tender chicken wings coated in a spicy, tangy marinade and slow-cooked to perfection. Served with a rich, savory consomé for dipping, this dish is perfect for a satisfying meal or a delicious party appetizer.

Ingredients

For the Wings:

  • 2 lbs chicken wings
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1/4 cup apple cider vinegar
  • 1/4 cup vegetable oil
  • 1/4 cup tomato paste

For the Consomé:

  • 2 cups beef or chicken broth
  • 1/2 cup tomato sauce
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

Instructions

  1. Prepare the Marinade:
  • In a bowl, mix together garlic, oregano, cumin, smoked paprika, chili powder, black pepper, salt, apple cider vinegar, vegetable oil, and tomato paste to create a marinade.
  1. Marinate the Wings:
  • Coat the chicken wings thoroughly with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
  1. Cook the Wings:
  • Preheat your oven to 375°F (190°C). Arrange the marinated wings on a baking sheet lined with parchment paper or foil.
  • Bake for 30-35 minutes, or until the wings are crispy and cooked through. For extra crispiness, broil for an additional 2-3 minutes.
  1. Prepare the Consomé:
  • Toast the guajillo and ancho chiles in a dry skillet over medium heat for 1-2 minutes, or until fragrant. Transfer them to a bowl and cover with hot water to rehydrate for about 10 minutes.
  • In a blender, combine the rehydrated chiles, beef or chicken broth, tomato sauce, onion, garlic, oregano, cumin, smoked paprika, and a pinch of salt and pepper. Blend until smooth.
  • Heat vegetable oil in a saucepan over medium heat. Pour in the blended mixture and simmer for 15-20 minutes, or until the consomé has thickened slightly.

  • Serve the crispy birria wings hot with the warm consomé on the side for dipping.
