Ingredients
- 4 large potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 green onions, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup sour cream
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1/2 teaspoon garlic powder

Instructions
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Place the potatoes on a baking sheet and bake for about 45-60 minutes or until they are tender when pierced with a fork.
- Mash the Potatoes:
- Once the potatoes are done, let them cool slightly.
- Cut the potatoes in half and scoop out the flesh into a large bowl. Discard the skins or save them for another use.
