Baked Potato Balls Recipe

Crispy on the outside and soft on the inside, these baked potato balls are a delicious and easy-to-make snack or side dish. They are perfect for parties, game nights, or a cozy family dinner.

Ingredients

  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup sour cream
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil (for brushing)

Instructions

  1. Prepare the Potatoes:
  • Preheat your oven to 400°F (200°C).
  • Wash the potatoes thoroughly and pierce them several times with a fork.
  • Place the potatoes on a baking sheet and bake for about 45-60 minutes or until they are tender when pierced with a fork.
  1. Mash the Potatoes:
  • Once the potatoes are done, let them cool slightly.
  • Cut the potatoes in half and scoop out the flesh into a large bowl. Discard the skins or save them for another use.
  • Mash the potato flesh until smooth.
  1. Mix the Ingredients:
  • Add the shredded cheddar cheese, Parmesan cheese, green onions, parsley, sour cream, garlic powder, onion powder, salt, and pepper to the mashed potatoes. Mix well.
  • Stir in the beaten egg and breadcrumbs until everything is well combined.
  1. Form the Potato Balls:
  • Take small portions of the potato mixture and roll them into balls, about the size of a golf ball. If the mixture is too sticky, you can wet your hands slightly to make rolling easier.
  1. Bake the Potato Balls:
  • Place the potato balls on a baking sheet lined with parchment paper.
  • Lightly brush each ball with olive oil to help them crisp up in the oven.
  • Bake in the preheated oven for 15-20 minutes or until the potato balls are golden brown and crispy on the outside.
  1. Serve:
  • Remove the potato balls from the oven and let them cool slightly before serving.
  • Serve with your favorite dipping sauce, such as sour cream, ranch dressing, or ketchup.

Enjoy your delicious baked potato balls!
