Ingredients
- 8 bone-in, skin-on chicken thighs
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/2 teaspoon sesame oil
- 1/4 teaspoon black pepper
- Optional: sliced green onions and sesame seeds for garnish
Instructions
- In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and black pepper until well combined to make the marinade.
- Place chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
- Preheat your oven to 375°F (190°C).
- Remove the chicken from the marinade and transfer it to a baking dish, skin side up, reserving the marinade for basting.
- Bake the chicken in the preheated oven for about 35-40 minutes, or until the internal temperature reaches 165°F (74°C), basting occasionally with the reserved marinade.
- Once the chicken is cooked through and golden brown, remove it from the oven. Let it rest for a few minutes before serving.
- Optionally, garnish with sliced green onions and sesame seeds before serving. Enjoy your delicious Baked Huli Huli Chicken!
