Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and black pepper until well combined to make the marinade.
  2. Place chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  3. Preheat your oven to 375°F (190°C).
  4. Remove the chicken from the marinade and transfer it to a baking dish, skin side up, reserving the marinade for basting.
  5. Bake the chicken in the preheated oven for about 35-40 minutes, or until the internal temperature reaches 165°F (74°C), basting occasionally with the reserved marinade.
  6. Once the chicken is cooked through and golden brown, remove it from the oven. Let it rest for a few minutes before serving.
  7. Optionally, garnish with sliced green onions and sesame seeds before serving. Enjoy your delicious Baked Huli Huli Chicken!
