Ingredients

- 1/2 teaspoon garam masala
- 1 teaspoon cumin powder

- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
Instructions
- Prepare the Vegetables:
- Peel and dice the potatoes into small cubes.
- Chop the bell peppers and onions finely.
- Chop the tomatoes and slit the green chilies lengthwise.
- Heat the Oil:
- In a large pan or kadai, heat the oil over medium heat.
- Add the mustard seeds and cumin seeds. Let them crackle.
- Sauté the Onions:
- Add the finely chopped onions to the pan.
- Sauté until the onions turn golden brown.
- Add Tomatoes and Spices:
- Add the chopped tomatoes and green chilies to the pan.
- Cook until the tomatoes become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.
- Cook the Potatoes:
- Add the diced potatoes to the pan.
- Stir well to coat the potatoes with the spice mixture.
- Cover the pan and cook for about 10 minutes, stirring occasionally, until the potatoes are half-cooked.
- Add the Bell Peppers:
- Add the chopped bell peppers to the pan.
- Mix well and cook for another 10-15 minutes, or until the potatoes and bell peppers are tender.
- Finish with Garam Masala:
- Sprinkle garam masala over the cooked vegetables.
- Stir well to combine all the flavors.
- Garnish and Serve:
- Garnish with fresh coriander leaves.
