Aloo Shimla Mirch is a delicious and easy-to-make Indian vegetarian dish featuring potatoes (aloo) and bell peppers (shimla mirch) cooked with spices. It pairs well with roti, paratha, or rice, making it a perfect addition to any meal.

Ingredients

  • 3 medium-sized potatoes, peeled and diced
  • 2 medium-sized bell peppers (any color), chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit lengthwise
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions

  1. Prepare the Vegetables:
  • Peel and dice the potatoes into small cubes.
  • Chop the bell peppers and onions finely.
  • Chop the tomatoes and slit the green chilies lengthwise.
  1. Heat the Oil:
  • In a large pan or kadai, heat the oil over medium heat.
  • Add the mustard seeds and cumin seeds. Let them crackle.
  1. Sauté the Onions:
  • Add the finely chopped onions to the pan.
  • Sauté until the onions turn golden brown.
  1. Add Tomatoes and Spices:
  • Add the chopped tomatoes and green chilies to the pan.
  • Cook until the tomatoes become soft and mushy.
  • Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well.
